Unbleached flour isn't white because it hasn't been hanging around to get oxidized. Not everyone thinks it's better to pre-oxidize it through chemistry just to make it whiter. Do we know that carotenoids have no nutritional value?
Julia Child said that she used unbleached flour because it was lighter.
Chemical analysis is complicated. There's no reason to abandon basic principles. Fresh and natural are generally the way to go.
